Instruction
Step 1 : Whisk together the flour, baking soda, salt and cinnamon.
Step 2 : Set aside.
Step 3 : On medium speed, cream together the butter, peanut butter, granulated sugar, brown sugar and vanilla extract, about 3 minutes.
Step 4 : Add the egg and beat to combine.
Step 5 : On low speed, gradually add the flour mixture until just combined.
Step 6 : Using a large spatula or wooden spoon, stir in the oats, and then the chocolate chips.
Step 7 : Cover and chill for at least 3 hours.
Step 8 : Preheat the oven to 350 F. Line baking sheets with parchment paper.
Step 9 : Use a large cookie scoop (3 tablespoons) and drop dough onto prepared baking sheets about 2 inches apart.
Step 10 : Lightly sprinkle each cookie with salt.
Step 11 : Bake for 10 minutes, or until the cookies are lightly golden.
Step 12 : Cool completely on the baking sheet and then store in an airtight container at room temperature.
