Black Bean Soup - Cindy Style

bacon
Amount: 8 slice
onion

chicken broth
Amount: 3 ml
water
Amount: 3 ml
Instruction
Step 1 : Either soak the beans overnight, or follow quick soak instructions on package.
Step 2 : Drain and rinse beans.
Step 3 : Cut the bacon slices in half lengthwise, and then into small pieces. Cook bacon in soup pot until done. Soak about half the bacon grease out of the pan with a paper towel.
Step 4 : Add onions, jalapeno and garlic. Cook until onion is translucent.
Step 5 : Add 1/3 cup of chicken broth to pan to deglaze.
Step 6 : Add beans back into the pot.
Step 7 : Add chicken broth and water. Bring to a boil. Reduce heat and partially cover pan with lid. Cook for 3 to 4 hours, or until desired doneness is achieved.
